The wine-making company located on the slopes of the Colli lanuvini, near the archaeological park of the Castelli Romani, has an extension of 15 hectares which are cultivated with modern technologies.
The volcanic origin of the soil and the particular position of the vineyards whose production does not overcome the quantity of 100 tonnes per hectare characterize the fundamental points to produce the wine of this company. The grapes, harvested by hand during a premature time, are pressed softly to obtain a concentration which does not overcome the 65%. The fermentation at low temperatures is made on the cleared must.
Within this company bottling and other procedures such as fizzing and sparkling are executed following the most modern oenological technology.
