This wine-cellar can be reached going through the Via Appia and taking Via Nettunense toward Anzio or from the street Pontinia, slip-road:Aprilia or from the railway station in Campoleone.

Frascati Superiore d.o.c. Antica Roma
A complex wine, but elegant.
Vineyards:
Malvasia di Candia 35%, Trebbiano toscano 35% e Greco 30%
Vintage and Vinification:
Vinification of white wine, softly pressed, fermentation and controlled temperature of the clear must “Prima Goccia”, by adding selected leavens. The wine then obtained is filtered to prevent it from fermenting again.

Organoleptic analysis:
Clearness: very clear
Colour: golden yellow, with a moderate chromatic charge
Scent: soft, ripe fruits, with signs of leaven and banana.
Taste: soft with a good level of alcoholic grades, moderate acidity, good structure, clear and persistent.

Foods:
Great at lunchtime, with light hors d'oeuvres, not excessively sapid soups, boiled fish and white meat. It has to be served cold at a temperature of 8-10 °C, and to be consumed by the end of the next year

Silver blue – Sparkling wine
Vineyards:
Falanghino and Chardonnay.
Vintage and Vinification:
Vinification of white wine, softly pressed, fermentation and controlled temperature of the clear must, by adding selected leavens. The wine then obtained is filtered to prevent it from fermenting again. Then new fermentation is almost natural: start in January and ends in February.

Organoleptic analysis:
Froth: vanishing
Perlage: fine and persistent
Clearness: very clear
Colour: pale yellow, with greenish tones.
Scent: floral and ripe apple
Taste: sapid, full of life, rounded. The same sense of ripe apple.

Foods:
Great as aperitif, with hors d’oeuvres (fish, bacon) and with delicate and light main courses (typical during summer). It is suggested to consume this wine within the year following its vintage, better if during Spring and summertime, when you will savour its full freshness and fineness.
Temperatura di servizio: 8°-10° C.

Malvasia di Candia, Malvasia puntinata or del Lazio and Trebbiano toscano.

Colour: pale yellow, with green tones.
Scent: fruity (apple and banana).
Taste: dry, right bodied, with a moderate level of alcoholic grades, fruits

Foods:
Great at lunchtime, with light hors d'oeuvres, fish and roasted white meat. Generally it is perfect with all the types of light foods. It has to be served cold at a temperature of 8-10 °C, and it has to be consumed by the end of the year following the vintage.
